Im Mittelpunkt der Gourmandise stand um 1900 noch mehr das durchkomponierte Menü als die einzelne Verkostung einer Speise. Der festliche Rahmen wurde durch Menükarten und Service, Tafelmusik und Sitzordnungen konventioneller gehandhabt als heute.

Am Beispiel der sächsischen Haupt- und Residenzstadt dokumentiert die Ausstellung die „Tafelkultur um 1900“. Die Exponate gruppieren sich in zwei Bereiche. Der erste rückt die Tafel selbst in den Mittelpunkt und thematisiert die Dimensionen feine Speisens an vier Beispielen aus Dresden: dem Königshof, einem vermögenden Privathaushalt mit Herrschaftsküche, der „Gelben Suppe“ der Stadt Dresden und den Dresdner Hotels und Restaurants. Der zweite Bereich befasst sich mit ausgewählten Nahrungsmitteln und den königlichen Hoflieferanten, ohne deren Waren die feine Dresdner Küche um 1900 nicht möglich gewesen wäre. Darüber hinaus wird die Herstellung von Menü- und Speisekarten als Tafelzubehör sowie die zeitgenössische Küchentechnik und Kochkunst thematisiert.

Der zur Ausstellung erscheinende Begleitkatalog dokumentiert nicht nur die zahlreichen Exponate der Schau, sondern bietet zusätzlich einen Einblick in die kulinarische Ästhetik der Zeit und erläutert die avancierte Kochkunst im damaligen Deutschland. Der Katalog ist in der Ausstellung und im Buchhandel erhältlich.

Das vielfältige Begleitprogramm zur Ausstellung präsentiert den Besucher(-innen) Vorträge zur sächsischen Ernährungsgeschichte. Dresdner Produzenten handwerklicher Nahrungs- und Genussmittel stellen ihre Produkte vor und Dresdner sowie Leipziger Gourmetköche nehmen Gerichte, wie sie um 1900 am Dresdner Hof gekocht wurden, für die Dauer der Ausstellung auf ihre Speisekarte.

Im Rahmen der Ausstellung „Tafelkultur – Dresden um 1900“ bieten Studierende der TU Dresden und das Team von MOVE IT! YOUNG, Schulklassen die Möglichkeit, sich für zwei Projekttage im Stadtarchiv anzumelden. Beide Projekttage können separat gebucht werden.
