Welchen Stellenwert hatten Zutaten bzw. der Eigengeschmack in der exquisiten Küche um 1900, als die Harmonie der Aromen (Eva Barlösius) die kulinarische Ästhetik dominierte? Um diese Frage zu klären, geht das Forschungsprojekt der Produktion und dem Handel von Nahrungsmittel nach, wie er in Sachsen um 1900 betrieben wurde. Ein besonderer Schwerpunkt liegt auf dem Segment des Feinkosthandels (Kolonialwarenhandel) und auf den Hoflieferanten.

In einem zweiten Schritt sollen die zeitgenössischen Orte und Niveaus der Nahrungsaufnahme (Häusliche Küche / Garküchen, Gasthöfe und Restaurants / Herrschaftsküche) erschlossen werden. Dies dient vor allem der Verortung der Dresdner Hofküche. Sie wird einen besonderen Schwerpunkt der Studie ausmachen. Die Untersuchung fragt nach den Tischen und Tafeln, die die Hofküche bedienen musste. Es gab unterschiedliche Niveaus und Budgets für Herrscherfamilie, den adeligen Hofstaat, am Hof arbeitende Musiker, Schauspieler, Treiber zur Jagd etc. Neben den Köche, Köchinnen und ihren Arbeitskonditionen sind vor allem auch die Zutaten für die Hofküche, die Qualität und Herkunft von Nahrungsmittel aus Eigenproduktion (Wild, Fisch etc.) bzw. vom Markt oder Handel von Interesse.

Darüber hinaus werden die Anlässe für die höfischen Tafeln, die Ausgestaltung der Menüs, die Differenz zwischen der fürstliche Alltags- und Festküche sowie Serviermethoden Gegenstand der Studie sein. Zudem soll auch geklärt werden, wie die Kochkunst am Hof öffentlich und privat wahrgenommen wurde und wie das Niveau der Kochkunst in der Dresdner Hofküche im europäischen bzw. deutschen Vergleich einzuschätzen ist.
