In Dresden entstanden Restaurants, in denen man à la carte speisen konnte, seit den 1820er Jahren in Geselligkeitsvereinen und Hotels. Zu diesem Zeitpunkt hatte in Europa die exquisite Kochkunst der Moderne bereits begonnen, den Eigengeschmack der Hauptzutaten zu betonen. Diese kulinarische Ästhetik beeinflusste auch das Speisenangebot in den Restaurants.

Die Studie »Dresden à la carte« untersucht nicht nur die Entstehung von Restaurants in der sächsischen Residenzstadt, sondern vergleicht auch das Kochniveau der Gastronomie mit dem von Küchen in herrschaftlichen Privathaushalten.
